"Chanko" Style Hotpot with Chicken Meatballs and Vegetables 鶏つみれ入り「ちゃんこ」鍋


Made this chanko nabe (sumo stable style hotpot) for a New Year's Eve party several years ago. Cooked chicken meatballs made from minced (by yours truly) thigh meat mixed with chopped scallions, grated ginger, sake, salt and pepper in a broth drawn from a whole chicken carcass, together with mizuna greens, hakusai (Napa Cabbage), shimeji mushrooms, tofu, and shirataki noodles (interestingly, the photo used in the Wikipedia article for shirataki is mine).
