Salad of radish, spring onion, and asparagus with a garlic vinaigrette ラディッシュ、春タマネギ、アスパラガスのサラダ、ニンニク風味のヴィネグレット

おなじみのSF市庁舎横のファーマーズマーケットで揃えた季節の野菜で作った、葉っぱもの主体でないちょっと傾向の違うサラダです。

Made this salad - a departure from the usual leafy vegetable based salads - using seasonal vegetable from the usual SF Civic Center farmer's market.

まずドレッシングの下準備として、白ワインビネガー少々に刻んだニンニク一片を入れ、15分ほど置いて風味を出します。それから野菜の準備。ラディッシュは洗って薄切りにし、ボウルに入れて塩を振って混ぜしばらく置き、底に溜まった水を捨て、手で軽く絞ります。アスパラはかるく塩茹でし、食べやすい大きさに切ります。春タマネギは薄切りにしたものを冷水にさらして辛味を取り、ざるに空けておきます。これら野菜の水を良く切り、大きいサラダボウルに入れてさっと混ぜます。

Started by immersing a finely chopped clove of garlic in white wine vinegar for about 15 minutes to make a base for the dressing. Then came the vegetables. The radish was sliced thinly, salted, and rested in a bowl for a few minutes - after discarding the water that accumulates, squeezed the radish to get rid of even more excess water. The asparagus was quickly blanched in salted boiling water, then cut into bite-size pieces. Spring onions were sliced thin, bathed in cold water to take the edge off the flavor, then drained well. The vegetables were then placed in a large bowl and tossed to mix.

野菜が揃ったところで、ドレッシング作成。ニンニク入りのお酢に極上のエキストラバージンオリーブオイルを混ぜ、馴染みを良くするためにほんの少しディジョンマスタードを加え、黒コショウを一振りして良く撹拌(野菜に塩味が付いているので塩は入れません)。これをボウルに加え、優しく、でもまんべんなく野菜と馴染ませて完成。ラディッシュとタマネギの辛味が抑えられ、アスパラガスとバランスが取れた食感の良いサラダです。

Once the vegetables were prepped, the dressing was mixed - added a nice measure of good (and I say really good) extra virgin olive oil to the garlic-infused vinegar with a tiny dab of Dijon mustard and a dash of black pepper, mixed well to bond, then tossed gently yet thoroughly with the vegetables in the bowl to finish. A great combination of different textures and flavors, with the sting from the radish and onions kept under control.

Salad of Mixed Greens and Cara Cara Oranges with Basic Vinaigrette Dressing 季節の葉野菜とカラカラオレンジのサラダ、基本のヴィネグレット・ドレッシング

正直に言えば野菜の旨さに目覚めたのは米国移住以後、しかもこの5〜6年なのですが、最近は近所(サンフランシスコ市内)のファーマーズマーケットに行っては季節の旨そうな野菜を物色するようになっています。

そんな野菜をサラダ、というと芸が無いようですが(無論、他の調理方法でも食べています)、野菜の下ごしらえや油と塩の使い方をナパのとある有名レストランのレシピを通じって教わってからはかつて「野菜食べなきゃと」義務的に食べていたものを、作る所まで含めて楽しめるようになりました。

これもそんな一品。穫れたての葉野菜を氷水で洗ってしゃっきりさせてからサラダスピナーで水をしっかり切り(これ重要)、シンプルなヴィネグレットドレッシング(以下参照)で優しく和えてから、食べる直前に塩コショウを振ったものです(食べる直前の塩、というのが葉野菜のしゃっきり感を保つ上でこれまた重要)。そこに甘みを足すべくこれまたファーマーズマーケットで買ったカラカラオレンジを載せて完成。

ヴィネグレットドレッシングの作り方:

  • 非金属(お酢の酸対策)の容器に注いだ赤ワインヴィネガーに細かく刻んだ少量のニンニク(大きさにもよるけど1~2カケ)を漬け、30分ほど置く
  • ニンニクの風味がお酢に移ったかな、というところでオリーブ油を加える
  • ワインヴィネガーとオリーブ油の比率は1:4~1:5といったところ
  • お酢と油が分離しないよう、ほんの少量(入れすぎるとマスタード臭くなるので)のディジョンマスタードを加え、泡立て器などで良く撹拌する
  • 和える際には野菜の歯ごたえと形状に気をつけながら全ての材料がうっすらとコートされるように良く混ぜ合わせる
To be totally honest, I've learned to appreciate how good vegetables can taste fairly recently (the last 5~6 years, perhaps), but these days I find myself making regular trips to the local farmer's markets (in San Francisco) to seek tasty vegetables of the season. 

It may seem awfully simplistic to make salads out of such fine vegetables, but after learning some techniques on making good salad (such as how to use oil and salt, and how to prep the vegetables) from the recipes of a famous Napa restaurant, I find myself enjoying making and eating salads - what I previously ate out of a sense of obligation to have a "balanced" meal.

The pictured is one of such salads that I made. Washed a spring mix of leafy vegetables in ice water, then removed the excess water (critical step to have a crispy texture) with a salad spinner before gently tossing with a simple vinaigrette (see below) so that the vegetables are evenly and thinly coated - and only seasoning with salt and pepper immediately before serving (also critical: salt added too early will rob the vegetables of its crispiness). Finished with some Cara Cara oranges to add some sweetness.

How to make a simple vinaigrette:
  • Pour a bit of red wine vinegar into a non-metallic bowl, then add a small amount (1~2 cloves, perhaps) of finely chopped garlic, let stand for 30 minutes or so
  • When you feel that the vinegar is infused with garlic flavor, add olive oil
  • Ratio of vinegar to oil: 1:4 to 1:5 depending on your taste
  • Add a dash of Dijon mustard to emulsify the oil - unless you want a strong mustard flavor, keep the amount very small, mix well
  • When tossing the salad, toss well so all the vegetables are thinly coated, but be gentle so the vegetables maintain their original shape and texture

Arugula, Romaine, and Tomato Salad with Crisp Bacon, Mandarin Oranges, and Roasted Waluts ルッコラ、ロメインレタス、トマトのサラダ、ベーコン、みかん、クルミ入り

初めてサンフランシスコベイエリアっぽいことを書きますが、ナパ・ヴァレーにあるシェフ・トーマス・ケラーのレストランで先日食べたサラダに触発された一品です。サラダ用水切り機(サラダスピナー)で良く水を切ったロメインレタスとルッコラ、ファーマーズマーケットで買ったトマトをワインヴィネガーとグレープシードオイル、ディジョンマスタード、ニンニク、塩コショウで作ったヴィネグレット・ドレッシングで和え、歯ごたえに変化をつけるべくカリカリベーコンと香ばしく焼かれたクルミ、ミカンとさっと混ぜたものです。サラダは油と塩の味、そして異なる食感の混在が大事、というのをケラー氏のレストランで学んだので、その辺を意識して作りました。

A salad inspired by one that we had at Thomas Keller's Ad Hoc in Napa. Romaine and arugula was spinned in a salad spinner to remove excess moisture, then tossed with fresh tomatoes from a farmer's market in a vinaigrette made with red wine vinegar, grapeseed oil, Dijon mustard, garlic, salt and pepper. Mixed in some crispy fried bacon, mandarin oranges, and roasted walnuts to add crunch and texture to finish. Salads are all about the oil and salt enhancing the coexistence of different textures - a major lessoned learned from "Sir" Keller.
