冷蔵庫の余り野菜処分的かつ料理と呼ぶのもどうかな、という簡単なパスタですが、意外と旨かったです。

Made this simple (not sure whether I should call it "cooking") pasta to use up some unused vegetables in the refrigerator, but it turned out surprisingly tasty.

刻んだベーコンとタマネギ、ニンニクを少量のオリーブ油で炒め、火が通ったら皮を剥いて刻んだトマトを加え、塩コショウで味を整えて軽く煮詰めます。

Sautéed some chopped bacon, onions, and garlic in olive oil until soft and translucent, then added a peeled and diced tomato. Season with salt and pepper, then simmer while cooking the spaghetti.

その間にスパゲッティを塩を十分に効かせたお湯でアルデンテに茹で、最後の2分間にキャベツのざく切りも加えて火を通してしまいます。

While the sauce is simmering, cooked the spaghetti in well-salted boiling water until al dente, and added roughly chopped cabbage during the last 2 minutes or so to cook through.

スパゲッティとキャベツをざるに空け、水気を切ったらソースと混ぜ、刻みパセリを散らして出来上がり。ソース2に対しパスタは1ぐらいの配分で健康的に仕上げました。

Drained the spaghetti and cabbage in a colander, shook off excess water and tossed it well with the sauce, then garnished with parsley to finish.  Fairly healthy, with a sauce to pasta ratio of about 2:1.

A pasta dish made in an attempt to consume leftover vegetables (asparagus, eggplant) and stuff in the freezer (tomato sauce, bacon), while achieving some nutritional balance.

残り野菜(アスパラガスとナス)と冷凍庫に放置されていたもの(ベーコン、使い残しのトマトソース)を使い、多少はバランスの良い食事を、と思って作ったパスタ料理です。

Started the sauce by cutting the frozen bacon into small pieces, and then cooked them on a skillet to render the fat. Sliced the eggplant and asparagus into bite sized pieces, and added them to the bacon and fat in the skillet with some finely chopped garlic, sautéd until tender, then mixed in the defrosted tomato sauce, seasoned with salt and pepper, and simmered to finish.

まず凍ったままのベーコンをコマ切れにし、フライパンで炒めて油を出しました。そこに一口大に切ったナスとベーコン、ニンニクのみじん切りを入れて炒め、野菜に火が通ったら解凍したトマトソースを混ぜ、塩コショウで味を整え、少々煮込んでソースは完成。

Cooked the farfalle (ribbon shaped pasta) in salted water a bit (a minute?) short of al dente, tossed well with the sauce, and served with a sprinkling of finely chopped parsley (this was from our planter). Nice way to eat some vegetables and still enjoy some pasta!

塩を効かせたお湯でアルデンテの一分手前まで茹でたファルファーレ(リボンパスタ)をソースと良く和え、(これは庭のプランターで栽培した)パセリのみじん切りを振りかけて出来上がり。野菜多めに作って、パスタは減らしてバランスよく頂きました!

Stewed Hamburger (Sailsbury) Steak 煮込みハンバーグ

以前取り上げたハンバーグを応用(使い回し)した煮込みハンバーグです。「煮込む」のは厚目のハンバーグを上手に焼くのが難しいことに対する「チート」かな、と思ってこれまで作ったことはありませんでしたが、先日大量に作って冷凍してあったハンバーグ種を使わなきゃ、と言う時にためしてみたら焼いたものとはまた違う味わいで美味。「食わず嫌い」ならぬ「作らず嫌い」でした(笑)。

  • 皮を剥いたニンジンを大きめに切り、塩を振って電子レンジで火を通したものと、ブロッコリーを軽く茹でた、あるいは蒸したものを用意する
  • 鋳鉄のフライパン(オーブンに入れるためこれを使用)でベーコンを数切れ炒め、油が出て香ばしく焼けたら取り出し、刻んでおく
  • 余分な油をペーパータオルで拭ってからハンバーグを入れ、両面にいい焼き色が付くまで焼いてから(火を完全に通さなくても良い)一旦取り出す
  • ハンバーグの焼き汁が残ったフライパンに薄切りのタマネギとマッシュルームを入れ(油が足りず焦げてしまいそうならバターやサラダ油を補う)て炒め、キツネ色になったら小麦粉を少量加え、粉っぽさが無くなるまでさらに炒める
  • お湯で溶いたチキンコンソメ、赤ワイン、ケチャップ、ウスターソースを好みの配分で加え(写真のものは4:2:1:1ぐらいの比率、量はフライパンの大きさに合わせて)、良く混ぜ合わせて沸騰寸前まで加熱する
  • ハンバーグを再投入し、ニンジンを加え、325℉(162℃)に熱しておいたオーブンにフライパンごと入れて10分ほど煮込む
  • ブロッコリーとベーコンを乗せ、さらに5分ほどオーブンで熱して完成
ドミグラスソースなどを使えば本格的なのでしょうが、これはこれでご飯に合う「家庭の味」でした。そしてワイン(カベルネソービニョン)にも。

Made this dish as a way of utilizing leftover (uncooked and frozen) hamburger patties. I've avoided stewed hamburgers (popular in Japan) thinking that stewing was a technique to avoid undercooking or overcooking thick hamburger patties, and therefore akin to cheating, but this turned out to be a pretty tasty dish in its own right. Never dismiss a dish without eating - or in this case, making it.
  • Prep the vegetables - peel and and cut carrots into fairly large pieces, then cook them in a microwave with a sprinkling of salt, and also lightly boil or steam some broccoli
  • Fry a few slices of bacon in a cast iron skillet until the fat is rendered, set aside the bacon and chop into small pieces
  • Wipe off excessive fat with a paper towel and cook the hamburgers until nicely browned on both sides - no need to cook through - then set aside
  • Add thinly sliced onions and mushrooms to the pan and sauté until slightly caramelized in the pan juices (add some butter/oil if necessary to avoid burning), add a small amount flour and stir well until the onion/mushroom mix is evenly coated
  • Add a mix of chicken bouillon (cubes dissolved in hot water is fine), red wine, ketchup, and Worcestershire sauce to taste (I used a 4:2:1:1 ratio and adjusted the amount to have enough cooking sauce in the skillet), bring to a simmer
  • Add the hamburgers and the carrots into the skillet, place in an oven heated to 325F, and cook for 10 minutes or so
  • Add the broccoli and the chopped bacon, cook for another 5 minutes, then serve in the skillet
If one could make some demi glace this would become a pretty elaborate dish, but the above broth/red wine/ketchup/WS combination makes this into a rice-friendly, homestyle dish. Went well with a Cabernet, too.

Arugula, Romaine, and Tomato Salad with Crisp Bacon, Mandarin Oranges, and Roasted Waluts ルッコラ、ロメインレタス、トマトのサラダ、ベーコン、みかん、クルミ入り

初めてサンフランシスコベイエリアっぽいことを書きますが、ナパ・ヴァレーにあるシェフ・トーマス・ケラーのレストランで先日食べたサラダに触発された一品です。サラダ用水切り機(サラダスピナー)で良く水を切ったロメインレタスとルッコラ、ファーマーズマーケットで買ったトマトをワインヴィネガーとグレープシードオイル、ディジョンマスタード、ニンニク、塩コショウで作ったヴィネグレット・ドレッシングで和え、歯ごたえに変化をつけるべくカリカリベーコンと香ばしく焼かれたクルミ、ミカンとさっと混ぜたものです。サラダは油と塩の味、そして異なる食感の混在が大事、というのをケラー氏のレストランで学んだので、その辺を意識して作りました。

A salad inspired by one that we had at Thomas Keller's Ad Hoc in Napa. Romaine and arugula was spinned in a salad spinner to remove excess moisture, then tossed with fresh tomatoes from a farmer's market in a vinaigrette made with red wine vinegar, grapeseed oil, Dijon mustard, garlic, salt and pepper. Mixed in some crispy fried bacon, mandarin oranges, and roasted walnuts to add crunch and texture to finish. Salads are all about the oil and salt enhancing the coexistence of different textures - a major lessoned learned from "Sir" Keller.
