冷蔵庫の余り野菜処分的かつ料理と呼ぶのもどうかな、という簡単なパスタですが、意外と旨かったです。

Made this simple (not sure whether I should call it "cooking") pasta to use up some unused vegetables in the refrigerator, but it turned out surprisingly tasty.

刻んだベーコンとタマネギ、ニンニクを少量のオリーブ油で炒め、火が通ったら皮を剥いて刻んだトマトを加え、塩コショウで味を整えて軽く煮詰めます。

Sautéed some chopped bacon, onions, and garlic in olive oil until soft and translucent, then added a peeled and diced tomato. Season with salt and pepper, then simmer while cooking the spaghetti.

その間にスパゲッティを塩を十分に効かせたお湯でアルデンテに茹で、最後の2分間にキャベツのざく切りも加えて火を通してしまいます。

While the sauce is simmering, cooked the spaghetti in well-salted boiling water until al dente, and added roughly chopped cabbage during the last 2 minutes or so to cook through.

スパゲッティとキャベツをざるに空け、水気を切ったらソースと混ぜ、刻みパセリを散らして出来上がり。ソース2に対しパスタは1ぐらいの配分で健康的に仕上げました。

Drained the spaghetti and cabbage in a colander, shook off excess water and tossed it well with the sauce, then garnished with parsley to finish.  Fairly healthy, with a sauce to pasta ratio of about 2:1.

Rosemary Roasted Chicken Legs with Kohlrabi, Yellow Carrots, Onions,and Garlic ローズマリー風味のチキンと野菜のロースト

骨付きの鶏肉をいろんな野菜の上に載せてオーブンでローストすると鶏肉には野菜の風味が、そして根菜には鶏の焼き汁の旨味が移って実に旨いものです。しかも手のこんだ事をしなくても良いので調理が楽(でも見栄えは良い)という利点もあります。これはFrench Laundryのトマス・ケラーのレシピに触発されて作ったものです。丸ごとの鶏で作るとより見栄えも味も良いのですが今回は時間と手間を省いて鶏のモモ肉で作りました。それでも十分美味。

Chicken roasted on a bed of various root vegetables is a great standby dish when you don't want to get elaborate but enjoy a tasty meal that looks good as well - the aroma from the vegetables permeate the chicken, and juices from the roasting chicken infuse the vegetables with a rich flavor - best of both worlds. This dish was inspired by a Thomas Keller recipe, but I used chicken thighs instead of roasting a whole chicken (which I think tastes and looks even better) to save on time and effort. Tasted good nonetheless.

使った野菜は毎度おなじみのサンフランシスコ市役所前広場のファーマーズマーケットで買った無農薬・有機栽培のコールラビ(ブロッコリーとキャベツの合の子のような味)、黄色いニンジン、タマネギ、そしてニンニク。コールラビとニンジンは良く洗って皮を剥き、ざっくりと角切り。タマネギとニンニクは皮を剥いて根元部分を切り取り、タマネギは4等分、ニンニクはそのまま丸ごと。そんなゴロゴロした野菜をボウルに入れ、キャノーラ油をかけてタマネギが崩れない程度に混ぜ、塩コショウをして下ごしらえ終了。鶏肉は全面に塩コショウするだけ、とこちらも簡単。塩はなるべく良いもの、コショウは黒の碾き立てを使うと良し。あとは庭のローズマリーの枝を数本もぎ取って用意完了。

The vegetables used this time were purchased at the farmer's market at the San Francisco Civic Center - organic and pesticide-free kohlrabi (tasted like a cross between broccoli and cabbage), yellow carrots, yellow onions, and garlic. The kohlrabi and carrots (leaves removed) were washed well, peeled, and chopped into fairly large pieces. Removed the skin and the root ends from both the onions and garlic, quartered the onions, but kept the garlic cloves whole. Put the lumpy mix of vegetables in a bowl, poured some canola oil and mix to coat, then seasoned with some good salt and freshly ground black pepper. Seasoned the chicken thighs with salt and pepper, took a few springs of rosemary from the garden, and done with the prep.

調理はまず鶏肉に焼き色をつけるところから。そのままオーブンに入れることのできる鋳鉄のフライパン(無ければ深めの耐熱皿でも良いですが、見栄えはこちらが良い)にキャノーラ油を少量注いで良く熱し、鶏モモ肉をこんがりと焼きます。野菜と共にオーブンで仕上げるので中まで火を通す必要はなく、いい色になったら別皿に移しておきます。

Started the cooking by browning the chicken thighs in a well heated ovenproof cast iron skillet (a deep baking dish would do, but a cast iron skillet is more visually appealing) with a dash of canola oil. No need to cook through the chicken as it will be finished in the oven with the vegetables - remove from the skillet once you have a nice brown color and set aside on a platter.

鶏肉を取り出したままのフライパンに今度は野菜を投入し、さっとかき混ぜて焼き汁を絡めたら鶏肉をその上に載せ、さらにローズマリーも載せ、あらかじめ375F(190℃)に熱しておいたオーブンにフライパンごと入れます。そのまま野菜に火が通るまで(20〜30分)焼けば鶏肉も丁度仕上がり、あとは食べるだけ。上の写真では焼き上がり直前にレモンの輪切りを載せてさらに見栄え向上を図りましたが、これは別にしなくても良し。肉と野菜を一緒に食べる事のできる、ワインとも合う(ピノノワールかサンジョベーゼ等の軽めの赤が良い)一品です。

Add the vegetables to the same skillet (don't wash!), mix lightly to coat them with pan juices, place the browned chicken thighs on top with the rosemary, then place the skillet into an oven preheated to 375F and roast until the vegetables are cooked through (20-30 minutes) - the chicken should be also done at that point - and time to eat. The photo above shows lemon slices placed a few minutes before the roasting was done, but that's just an added step for aesthetic reasons. A one-dish solution for eating meat and vegetables. Also goes well with a light red wine such as Pinot Noir or Sangiovese.

Salad of Mixed Greens and Cara Cara Oranges with Basic Vinaigrette Dressing 季節の葉野菜とカラカラオレンジのサラダ、基本のヴィネグレット・ドレッシング

正直に言えば野菜の旨さに目覚めたのは米国移住以後、しかもこの5〜6年なのですが、最近は近所(サンフランシスコ市内)のファーマーズマーケットに行っては季節の旨そうな野菜を物色するようになっています。

そんな野菜をサラダ、というと芸が無いようですが(無論、他の調理方法でも食べています)、野菜の下ごしらえや油と塩の使い方をナパのとある有名レストランのレシピを通じって教わってからはかつて「野菜食べなきゃと」義務的に食べていたものを、作る所まで含めて楽しめるようになりました。

これもそんな一品。穫れたての葉野菜を氷水で洗ってしゃっきりさせてからサラダスピナーで水をしっかり切り(これ重要)、シンプルなヴィネグレットドレッシング(以下参照)で優しく和えてから、食べる直前に塩コショウを振ったものです(食べる直前の塩、というのが葉野菜のしゃっきり感を保つ上でこれまた重要)。そこに甘みを足すべくこれまたファーマーズマーケットで買ったカラカラオレンジを載せて完成。

ヴィネグレットドレッシングの作り方:

  • 非金属(お酢の酸対策)の容器に注いだ赤ワインヴィネガーに細かく刻んだ少量のニンニク(大きさにもよるけど1~2カケ)を漬け、30分ほど置く
  • ニンニクの風味がお酢に移ったかな、というところでオリーブ油を加える
  • ワインヴィネガーとオリーブ油の比率は1:4~1:5といったところ
  • お酢と油が分離しないよう、ほんの少量(入れすぎるとマスタード臭くなるので)のディジョンマスタードを加え、泡立て器などで良く撹拌する
  • 和える際には野菜の歯ごたえと形状に気をつけながら全ての材料がうっすらとコートされるように良く混ぜ合わせる
To be totally honest, I've learned to appreciate how good vegetables can taste fairly recently (the last 5~6 years, perhaps), but these days I find myself making regular trips to the local farmer's markets (in San Francisco) to seek tasty vegetables of the season. 

It may seem awfully simplistic to make salads out of such fine vegetables, but after learning some techniques on making good salad (such as how to use oil and salt, and how to prep the vegetables) from the recipes of a famous Napa restaurant, I find myself enjoying making and eating salads - what I previously ate out of a sense of obligation to have a "balanced" meal.

The pictured is one of such salads that I made. Washed a spring mix of leafy vegetables in ice water, then removed the excess water (critical step to have a crispy texture) with a salad spinner before gently tossing with a simple vinaigrette (see below) so that the vegetables are evenly and thinly coated - and only seasoning with salt and pepper immediately before serving (also critical: salt added too early will rob the vegetables of its crispiness). Finished with some Cara Cara oranges to add some sweetness.

How to make a simple vinaigrette:
  • Pour a bit of red wine vinegar into a non-metallic bowl, then add a small amount (1~2 cloves, perhaps) of finely chopped garlic, let stand for 30 minutes or so
  • When you feel that the vinegar is infused with garlic flavor, add olive oil
  • Ratio of vinegar to oil: 1:4 to 1:5 depending on your taste
  • Add a dash of Dijon mustard to emulsify the oil - unless you want a strong mustard flavor, keep the amount very small, mix well
  • When tossing the salad, toss well so all the vegetables are thinly coated, but be gentle so the vegetables maintain their original shape and texture

Miso Broth Ramen Loaded with Vegetables 野菜たっぷり味噌ラーメン

料理というほどの料理ではないですが、野菜をたっぷりと入れた味噌ラーメン。子供の頃から家で(インスタントであろうと、生麺であろうと)ラーメンを作る時は栄養バランスのためと称して何がしか野菜ものを入れるように指導されてきたのですが、今もその教えは身に染み付いているようです。市販の生麺とスープがセットになった味噌ラーメンで作る手抜きの一品です。

好みの大きさに刻んだ豚コマ切れ肉(一番安いところ)、キャベツ、タマネギをモヤシと共にニンニクと胡麻油で炒め、塩コショウで味付けし、まだ歯ごたえが残っているうちに、並行してタイミングを合わせて作ったラーメンの上に乗せ、茹でコーン、刻んだ青ネギ、そして白ゴマを散らして出来上がり。キュウリを塩麹で和えたものと共に頂きました。

Not sure this qualifies as "cooking" due to its simplicity and use of packaged fresh ramen noodles and miso flavored soup base (not instant ramen), but an easy (lazy) and tasty way to eat vegetables. I've been making something like this since my early teens - my mother would not allow me to eat ramen at home without adding some vegetables in the name of "nutritional balance", and that habit has stuck with me ever since.

Stir-fried thin slices of the most inexpensive cut of pork you can find with chopped cabbage and yellow onions in sesame oil with garlic, then add bean sprouts and cook slightly. Pour the stir-fry mix onto a bowl of freshly cooked ramen (timing is crucial here - parallel processing is required), sprinkle some cooked corn kernels, sliced green onions, and white sesame seeds, then serve. Had this with cucumbers marinated in a mixture of salt and fermentation starter (shio-kouji).

Pot au Feu ポトフ

シチュー用の牛肉の角切り、骨付き鶏肉、ハーブ類(タイム、パセリ、ローリエ)、白ワイン、そしてクローブで取ったスープを塩コショウで味付けし、大ぶりに切ったキャベツ、ニンジン、タマネギ、そしてジャガイモを煮込みました。フレンチの定番。

Simmered some cubed beef stew meat and bone-in chicken with herbs (thyme, parsley, bay leaf), white wine, and cloves, seasoned with salt and pepper to make a tasty soup, then cooked cabbage, carrots, onions, and potatoes cut up into large pieces with it to make this classic French dish.

Chicken and Vegetable Risotto チキンと野菜のリゾット




アーボリオライスとワイン、チキンストックで作ったシンプルなリゾットに、焼いたチキンのもも肉(一般的には胸肉なのでしょうけど、旨いのはももなので)、別に茹でておいたカボチャとアスパラガスを加えてさっと煮込み、食べる直前に生のサンマルツァーノトマトを加え、パルミジャーノ・レッジャーノを摺り下ろして仕上げました。

Made a simple risotto with arborio rice, chicken stock, and wine. Added separately cooked chicken thighs (the standard recipe calls for breasts, but thigh meat is much tastier), pumpkins, and asparagus to simmer, then finished by mixing in fresh San Marzano tomatoes and topped with grated Parmigiano-Reggiano.
