Stir-Fried Beef, Onion, and String Beans

Stir fried beef, onion, and string beans 牛肉、タマネギ、インゲンの炒め物 by naotakem
Part of a series of attempts to replicate typical Chinese restaurant fare without using any mass produced pre-mixed sauces. Those sauces do make cooking easy and I'm not too squeamish about using them, but I just wanted to see if I could do without them.

It goes without saying that stir-fry dishes like these are all about prep - the ingredients should be flavored and cooked separately and assembled for a quick mix and heat-through with the finishing flavors and oil in a well-heated wok (which I didn't have so I used a large frying pan). This ensures that the vegetables are crisp, not oily and soggy, and the protein is flavored and cooked thoroughly, not bland and raw.

Prep:

  • Beef - slice into strips, place into bowl and add small amounts of soy sauce, sake, garlic and ginger (both grated), sugar, salt, black pepper, and a bit of potato or corn starch, massage thoroughly, let marinate for 10-15 minutes
  • String beans - remove inedible parts, blanch in boiling water with a pinch of salt for 2-3 minutes (adjust according to thickness of beans), drain, cool with cold water, drain well - watch out for overcooking, you want some crispness in the beans after cooling
  • Onions - slice into thin wedges
  • Sauce - mix Chinese oyster sauce, Chinese hot chili paste, chicken broth (again, used a powder dissolved in water), rice wine (ideally Chinese, but sake will do), salt, and black pepper to taste
  • Dissolve a small amount of cornstarch or potato starch in cold water - this is added at the end to give the dish a nice, thick consistency
Cooking:
  • In a large wok or frying pan heat a good amount of of sesame oil (enough to coat the entire inside of the pan) until smoking, add the marinated beef and cook until browned, remove and set aside
  • Add some more oil into the pan, heat well, add a whole dried red chili pepper if you want extra heat, add the onions, cook briefly (this should get rid of any brown bits at the bottom of the pan) until slightly soft
  • Add the cooked beef, string beans, and sauce, toss well and heat through; be careful not to put in too much sauce - you don't want the beef and vegetables swimming in a watery mess
  • Add the starch water in small amounts and continue to toss until you see some overall thickness in the sauce glazing the meat and vegetables
  • Transfer to serving platter
When executed successfully, you'll have something that's pretty close to what your local Chinese restaurant or takeout joint serves - don't expect perfect replication, though.

Lomo Saltado

Lomo saltado, essentially a beef and vegetable stir fry served over rice, is a dish that I ate on multiple occasions - for both lunch and dinner - during my travels in Peru and Bolivia some 18 years ago. Traditional recipe calls for French fries on the side but skipped that for both dietary and efficiency reasons.

Slice some lean steak, bell peppers (used green, red, and yellow for color), red onions, and tomatoes into thin strips. Mince some garlic. Heat vegetable oil in a well-heated skillet and brown the steak strips (seasoned with salt and pepper), add the onions and garlic (and a pinch of red pepper flakes), stir-fry until the onions are soft. The bell peppers and tomatoes are added at the end, and cooked until they are soft but retain some crunch. Season with additional salt and pepper, paprika, cumin powder, soy sauce, vinegar, and rice wine.

I guess the key is to flavor it so that it reminds one of Chinese food but doesn't taste like one. Serve over brown rice.

A Boeuf Bourguignon Variant

A dish in the manner of a traditional French dish from the Bourgogne region, Boeuf bourguignon (beef stewed in red wine, Bourgogne style). Deviates from the traditional recipe in several ways, the most significant being the use of a whole bottle of California Syrah  (and no other liquids) instead of a Pinot Noir to get a stronger wine flavor. Also did not use any beef stock since I had some beef bones on hand.

Made this dish on several occasions and previously blogged it here (in Japanese), but modified that recipe too, such as using fat rendered from bacon to sauté mushrooms, adding the crisp bacon bits back into the stew at the end, and using sliced onions instead of pearl onions. You may say that I applied some methods used when making coq au vin - or perhaps I got a bit lazy to follow a traditional recipe. Served this with some pappardelle pasta and steamed broccoli, and enjoyed with a California Zinfandel blend wine.

Hamburger (Salilsbury) Steak

As much as I like the American hamburger, an occasional craving for Japanese-style "hamburger steak (sailsbury steak)" that goes well with steamed white rice emerges. Ideally one will make this with a mix of ground beef and pork, but an all-beef patty with homemade bread crumbs, beaten eggs, and finely chopped onions mixed in and seasoned with salt and pepper to give it texture and flavor. Cooked the patty with a slice of butter for added juiciness, moved to a heated platter, then made a sauce by mix of the pan juices with worcestershire sauce, ketchup, and mustard to drizzle on the steak. Had it with a side of blanched broccoli and stewed pumpkins.

Stewed Potatoes and Beef, Japanese Style

This dish is a "go-to" for many Japanese households, but since I'm not too enthusiastic about having a potato-dominated dish with rice (carbs on carbs...), I only make it every now and then. But when I do make it, I make it without shortcuts - starting from making the basic Japanese dashi stock (broth of bonito flakes and dried kombu seaweed) from scratch. I tend to go easy on the soy sauce, sake, mirin, and dark sugar to give it a delicate flavor, which makes a better pairing with sake (or other alcoholic beverages) than with rice.

Pot au Feu

Simmered some cubed beef stew meat and bone-in chicken with herbs (thyme, parsley, bay leaf), white wine, and cloves, seasoned with salt and pepper to make a tasty soup, then cooked cabbage, carrots, onions, and potatoes cut up into large pieces with it to make this classic French dish.
