Part of a series of attempts to replicate typical Chinese restaurant fare without using any mass produced pre-mixed sauces. Those sauces do make cooking easy and I'm not too squeamish about using them, but I just wanted to see if I could do without them.

中華料理店で良く出るメニューを既製品の調合済みソースを使わずに作ったものの一つです。そうした既製品を使うのは楽で良いし、特に抵抗も無いので、使わずに作ってみたらどうなるか、というだけの試みです。

It goes without saying that stir-fry dishes like these are all about prep - the ingredients should be flavored and cooked separately and assembled for a quick mix and heat-through with the finishing flavors and oil in a well-heated wok (which I didn't have so I used a large frying pan). This ensures that the vegetables are crisp, not oily and soggy, and the protein is flavored and cooked thoroughly, not bland and raw.

今さらですが、こうした炒め物は下ごしらえが全て、と言っても良いでしょう。個々の素材をまずそれぞれ味付け・調理した上で、最後に十分に熱した中華鍋(持っていないので大きなフライパンで代用しましたが)で仕上げの味付けと加熱をすることによって、野菜が油まみれでどろっとなったり、肉類が生のままで味が十分に付いていない、といった事態を回避するわけです。

Prep:

  • Beef - slice into strips, place into bowl and add small amounts of soy sauce, sake, garlic and ginger (both grated), sugar, salt, black pepper, and a bit of potato or corn starch, massage thoroughly, let marinate for 10-15 minutes
  • String beans - remove inedible parts, blanch in boiling water with a pinch of salt for 2-3 minutes (adjust according to thickness of beans), drain, cool with cold water, drain well - watch out for overcooking, you want some crispness in the beans after cooling
  • Onions - slice into thin wedges
  • Sauce - mix Chinese oyster sauce, Chinese hot chili paste, chicken broth (again, used a powder dissolved in water), rice wine (ideally Chinese, but sake will do), salt, and black pepper to taste
  • Dissolve a small amount of cornstarch or potato starch in cold water - this is added at the end to give the dish a nice, thick consistency
下ごしらえ:
  • 牛肉は細切りにし、ボウルに入れて醤油、日本酒、下しニンニクとショウガ、砂糖、塩、黒コショウ、そしてコーンスターチか片栗粉をそれぞれ少量加え、良く揉み込んで10分から15分寝かせておく
  • インゲンはへたや筋を取り、軽く塩を効かせた沸騰するお湯で2〜3分(インゲンの太さ次第で加減)茹で、ざるに空けたら冷水で冷ます(しゃきっとした感触を残したいので茹で過ぎに注意)
  • タマネギは細めのくし形に切っておく
  • オイスターソース、豆板醤、中華鶏ガラスープ(「素」を溶かしたもので十分)、酒(紹興酒があれば良し、無ければ日本酒)、塩コショウを好みの量混ぜて合わせ調味料は作る
  • 「とろみ付け」用にコーンスターチ、あるいは片栗粉を少量水で溶いておく
Cooking:
  • In a large wok or frying pan heat a good amount of of sesame oil (enough to coat the entire inside of the pan) until smoking, add the marinated beef and cook until browned, remove and set aside
  • Add some more oil into the pan, heat well, add a whole dried red chili pepper if you want extra heat, add the onions, cook briefly (this should get rid of any brown bits at the bottom of the pan) until slightly soft
  • Add the cooked beef, string beans, and sauce, toss well and heat through; be careful not to put in too much sauce - you don't want the beef and vegetables swimming in a watery mess
  • Add the starch water in small amounts and continue to toss until you see some overall thickness in the sauce glazing the meat and vegetables
  • Transfer to serving platter
調理:
  • 中華鍋か大きなフライパンを熱し、ごま油を鍋全体に行き渡らせ、十分熱くなったら下味をつけた牛肉を投入してしっかりと炒め、別の器に移しておく
  • 同じ鍋に油を足し、再度加熱したら(辛味を増したい場合はここで赤唐辛子を丸ごと一本加える)タマネギを入れてさっと炒める(この過程で鍋底の残滓が取れるはず)
  • 牛肉とインゲン、合わせ調味料を入れ(入れ過ぎてびたびたにならぬよう注意)、加熱しながら良く馴染ませる
  • 水溶きコーンスターチ(片栗粉)を少量ずつ加えながら肉と野菜の表面にとろみが付くまで炒める
  • 盛り皿に移す
When executed successfully, you'll have something that's pretty close to what your local Chinese restaurant or takeout joint serves - don't expect perfect replication, though.

上手く行けば近所の中華料理店で出てくる炒め物に「近い」ものが出来る筈です。決して「同じ」ものになることは期待しない方が良いですが(笑)。

Stamina Domburi ("Sutadon") すた丼

A domburi (a dish that serves cooked meat, fish, and/or vegetables over rice in a bowl) that originated at a college town in Western Tokyo to match the appetite of hungry students. Called 'stamina domburi' due to its liberal use of meat (pork belly) and garlic and flavored primarily by soy sauce - a tasty, albeit calorie rich dish. It has since become more mainstream and could be found at Japanese style fast food outlets around Tokyo.

東京の西部の某学生街発祥の「スタミナ丼」略して「すた丼」。豚肉、ニンニクを醤油味でたっぷり食べるから「スタミナ」とはいささか短絡的かもしれませんがこの組み合わせで(カロリーはおいといて)旨く無い訳が無い、という一品です。最近では東京のあちこちで食べることができるようです。

The original recipe has never been published, but many people (especially former students) have reverse-engineered the dish; the following a combination of a few of them.
  • Cut thin-sliced pork belly strips into easy-to-eat lengths (3 inches would do - if not available, slice a block of pork belly yourself)
  • Slice onion into thin wedges
  • Prep the sauce by mixing soy sauce, a lot of finely minced/grated garlic, grated ginger (just a small amount - garlic is the main flavor here), sake, mirin (Japanese sweet rice cooking wine), Chinese chicken broth (I used the powdered type dissolved in hot water), sugar (a pinch for me, but if you want sweet you can add more), and black pepper in a small bowl; aside from the soy sauce, the liquids should be used sparingly
  • Boil water in a pan and cook the pork belly until it turns white, drain and set aside; this allegedly reduces the fat content somewhat and avoids overcooking after the sauce is added
  • Heat sesame oil in a frying pan, sauté the onions until slightly soft and fragrant, add the pork and the sauce, mix well and heat through
  • Serve over a bowl of rice with a boiled egg (probably my largest deviation from the Japanese recipes that call for a raw egg, but I live in the States)
  • Eat with abandon
本家のレシピは非公開ですが大勢の人(主に某大学の卒業生?)が再現を試みているのでここではそのいくつかを組み合わせてみました。
  • 豚バラ肉の薄切りを食べやすい長さ(7-8センチぐらい?)に切る(薄切りが入手できない場合はブロックを自分で適宜切りましょう)
  • タマネギを薄めのくし形に切る
  • 醤油、たっぷりの刻んだ、または下ろしたニンニク、下ろし生姜(ニンニクが主役なので控えめに)、日本酒、みりん、中華鶏ガラスープ(今回は顆粒を溶かしたものを使いました)、砂糖(好みで加減)、黒コショウをボウルに混ぜ、タレを作る(醤油以外の液体調味料は少量づつ)
  • 鍋に湯を沸かし、豚肉をさっと茹で上げて脂を少し抜いたら湯から上げる(タレを加えてからの炒め時間を短縮して具材が硬くなるのを防ぐ、とのこと)
  • フライパンにごま油を熱し、タマネギをさっと香りが立つまで炒めたら茹でた豚肉とタレを加え、よく混ぜ、全体に火を軽く通す
  • 丼にご飯を盛ったところに載せ、ゆで卵を添える(日本発のレシピでは生卵、となってますがいかんせんここはアメリカなもので…)
  • ためらいなくかき込むように食す

An easy one-pot dish to make - only downside being the marinating time for the pork - loaded with vegetables and flavor. Lifted straight off of a cookbook featuring recipes for Le Creuset French ovens.

鍋一つでできる(肉の塩漬けに時間がかかる以外は)簡単な肉と野菜たっぷりの味わい深い一品。ルクルゼのフレンチオーブンのためのレシピ本からそのまま頂きました。

Take a piece (500g or 1.1lbs) of pork, preferably a shoulder roast, salt all over and wrap tightly with a plastic wrap, marinate in the refrigerator for at least 8 hours. Used a pretty lean cut in the picture above, thought it might be better with a little more fat - but pork belly would be too much so pick your meat wisely.

豚の肩ロースを一塊(500gあるいは1.1ポンド)用意し、塩をまんべんなく振ってラップできつくくるみ、冷蔵庫で最低8時間ほど塩漬けにします。写真の肉は脂身がちょっと不足でしたが、バラ肉で作るのはさすがに脂がきつくなると思うので買う時に十分吟味を。

Before cooking, take the pork out of the refrigerator and let sit for an hour or so to bring to room temperature. Heat some butter (add some vegetable oil if worried about burning) in a heavy iron pot - doesn't have to be a Le Creuset - and brown the meat on all sides on mid-high heat. Add half of an onion, sliced thinly, cook until slightly caramelized. Cut up half a cabbage into 1/2-inch wide strips and add to the pot over the pork and onions. Add 1/4 cup of dry white wine and a bay leaf, cover pot, reduce heat to low and cook for 20-30 minutes, mixing the contents and turning the pork every now and then. Finish the seasoning with some freshly ground black pepper while cooking. When pork is done, take out the meat, slice it into thick pieces, and place them over the cabbage and onions in the pot. Serve family style in the pot. with Dijon mustard on the side. Probably best with a dry Riesling, but had it with a Pinot and it also worked very well.

調理前に冷蔵庫から豚肉を出し、一時間ほどおいて室温に戻します。厚手のダッチオーブンか深鍋(ルクルゼでなくとも鋳鉄製が良い)にバターを熱し(焦げるのが心配であればサラダ油などを少量加える)、肉を入れて中強火で全面に良い焼き色を付けます。タマネギ半個ほどを薄切りにしたものを加え、キツネ色になるまで炒めたら1センチ巾ほどに切ったキャベツ半分を肉とタマネギの上からかぶせます。白ワイン1/4カップほどを注ぎ、ローリエを一枚入れ、蓋をして弱火にし、20分から30分ほど調理します。途中で何度か中身を混ぜ、肉をひっくり返し、碾きたての黒コショウで味を整えます。最後は肉を取り出し、厚手に切って野菜の上に戻し、鍋のまま食卓に出し、ディジョンマスタードを添えて頂きます。辛口のリースリングと合わせるのがベストかな、と思いますが今回合わせたピノ・ノワールでも十分美味でした。

冷蔵庫の余り野菜処分的かつ料理と呼ぶのもどうかな、という簡単なパスタですが、意外と旨かったです。

Made this simple (not sure whether I should call it "cooking") pasta to use up some unused vegetables in the refrigerator, but it turned out surprisingly tasty.

刻んだベーコンとタマネギ、ニンニクを少量のオリーブ油で炒め、火が通ったら皮を剥いて刻んだトマトを加え、塩コショウで味を整えて軽く煮詰めます。

Sautéed some chopped bacon, onions, and garlic in olive oil until soft and translucent, then added a peeled and diced tomato. Season with salt and pepper, then simmer while cooking the spaghetti.

その間にスパゲッティを塩を十分に効かせたお湯でアルデンテに茹で、最後の2分間にキャベツのざく切りも加えて火を通してしまいます。

While the sauce is simmering, cooked the spaghetti in well-salted boiling water until al dente, and added roughly chopped cabbage during the last 2 minutes or so to cook through.

スパゲッティとキャベツをざるに空け、水気を切ったらソースと混ぜ、刻みパセリを散らして出来上がり。ソース2に対しパスタは1ぐらいの配分で健康的に仕上げました。

Drained the spaghetti and cabbage in a colander, shook off excess water and tossed it well with the sauce, then garnished with parsley to finish.  Fairly healthy, with a sauce to pasta ratio of about 2:1.

大人数向きで野菜とタンパク質をバランスよく取れるパーティ料理、というのはなかなかないものですが、これはあちこちで何度も作って好評な一品です。このちゃんちゃん焼き、本場北海道に倣うならば「鮭」を丸々一匹使い、バーベキュー用の大きな鉄板かホットプレートで作って大人数に振る舞うものですが、今回は大人6人と子供5名相手にアラスカ産のキングサーモンを使い、お呼ばれした先のお家にあった巨大なフライパンを使い、オーブンで調理しました。

There are few "scalable" party dishes that can provide a good balance of protein and vegetables, but this salmon dish is one of them that I've made on many occasions to positive reception. Called chan-chan-yaki, ("yaki" means "to grill/roast" in Japanese, but the etymology of this dish is otherwise unclear) it's a specialty of the Hokkaido region of Japan, typically cooked by fishermen using local salmon (chum salmon, Oncorhynchus keta) and locally available vegetables. The traditional method of cooking calls for an outdoor setting, cooking a whole salmon and mounds of vegetables on a large steel plate placed over an open fire to feed many, but this was made using a large skillet and oven at a friend's house for 6 adults and 5 small children - and replacing chum salmon with Alaskan King Salmon.

作り方は至って単純。魚と野菜、タレさえ用意すればあとは焼くだけ、です。サーモンは皮付きの大きな切り身(今回は片身の1/2程度を使用)を用意し、十分に塩コショウしておきます。キャベツ、ピーマン、シメジ、タマネギ、青ネギは食べやすい大きさにざっくりと切ります。タレは白味噌、日本酒、みりん、醤油、七味唐辛子、刻みニンニク、塩コショウを良く混ぜるだけ(塩辛く、あるいは甘くなりすぎないようにさえ注意すれば失敗はしません)です。
This is another "simple as it gets"dish - once you have the fish, vegetables, and the sauce ready, hardly any technique is involved. Purchased 1/2 of a whole filet of salmon (roughly 1/4 of the fish) with the skin on, ad seasoned well with salt and pepper. For the vegetables, we used cabbage, onions, green bell peppers, shimeji mushrooms, and green onions (other possibilities such as potatoes and sweet corn were considered, FYI) - all roughly (and unevenly, I confess) chopped. The sauce was a mix of white miso, sake, mirin, soy sauce, red pepper powder, chopped garlic, salt, and black pepper - as long as the sauce doesn't get too salty or sweet, any ratio is possible - mixed well to a smooth, liquid consistency.

熱したフライパンにサラダオイルを敷き、野菜をキャベツ、ピーマン、タマネギ、青ネギの順番で入れ、油を絡める程度に炒めたら野菜をのけてフライパンの中央に隙間を作り(いったん野菜を別の器に出しました)、サーモンを皮を下にして置いき、その上に野菜をかぶせ、タレをかけまわしたらあとはアルミホイルで全体を多い、350F(177℃)に熱しておいたオーブンに入れ、30分ほど蒸し焼きにします。サーモンに火が通ったらオーブンから出し、サーモンを崩しながら野菜とタレと良く混ぜ合わせて完成。鍋のままサーブし、各自好きなだけとって酒の肴にするも良し、ご飯のおかずにするも良し、の一品です。

The vegetables were cooked first in the skillet (well heated and with a dash of canola oil) - very briefly to coat with the oil but no need to cook through as the whole dish will be finished in the oven - then set aside to create an open space in the middle of the skillet (we temporarily transferred about 3/4 of the vegetables to a separate platter). The salmon was placed in that opening, skin down, then covered with the vegetables followed by the sauce. The whole skillet was then covered with cooking foil, and placed in an oven heated to 350F to cook for 30 minutes or so until the fish is cooked through. Once done, remove from the heat, break up the salmon and mix roughly with the vegetables (which should be nice and soft), and serve family style in the skillet. Can be enjoyed with some alcoholic beverages, or with some steamed white rice.

Rosemary Roasted Chicken Legs with Kohlrabi, Yellow Carrots, Onions,and Garlic ローズマリー風味のチキンと野菜のロースト

骨付きの鶏肉をいろんな野菜の上に載せてオーブンでローストすると鶏肉には野菜の風味が、そして根菜には鶏の焼き汁の旨味が移って実に旨いものです。しかも手のこんだ事をしなくても良いので調理が楽(でも見栄えは良い)という利点もあります。これはFrench Laundryのトマス・ケラーのレシピに触発されて作ったものです。丸ごとの鶏で作るとより見栄えも味も良いのですが今回は時間と手間を省いて鶏のモモ肉で作りました。それでも十分美味。

Chicken roasted on a bed of various root vegetables is a great standby dish when you don't want to get elaborate but enjoy a tasty meal that looks good as well - the aroma from the vegetables permeate the chicken, and juices from the roasting chicken infuse the vegetables with a rich flavor - best of both worlds. This dish was inspired by a Thomas Keller recipe, but I used chicken thighs instead of roasting a whole chicken (which I think tastes and looks even better) to save on time and effort. Tasted good nonetheless.

使った野菜は毎度おなじみのサンフランシスコ市役所前広場のファーマーズマーケットで買った無農薬・有機栽培のコールラビ(ブロッコリーとキャベツの合の子のような味)、黄色いニンジン、タマネギ、そしてニンニク。コールラビとニンジンは良く洗って皮を剥き、ざっくりと角切り。タマネギとニンニクは皮を剥いて根元部分を切り取り、タマネギは4等分、ニンニクはそのまま丸ごと。そんなゴロゴロした野菜をボウルに入れ、キャノーラ油をかけてタマネギが崩れない程度に混ぜ、塩コショウをして下ごしらえ終了。鶏肉は全面に塩コショウするだけ、とこちらも簡単。塩はなるべく良いもの、コショウは黒の碾き立てを使うと良し。あとは庭のローズマリーの枝を数本もぎ取って用意完了。

The vegetables used this time were purchased at the farmer's market at the San Francisco Civic Center - organic and pesticide-free kohlrabi (tasted like a cross between broccoli and cabbage), yellow carrots, yellow onions, and garlic. The kohlrabi and carrots (leaves removed) were washed well, peeled, and chopped into fairly large pieces. Removed the skin and the root ends from both the onions and garlic, quartered the onions, but kept the garlic cloves whole. Put the lumpy mix of vegetables in a bowl, poured some canola oil and mix to coat, then seasoned with some good salt and freshly ground black pepper. Seasoned the chicken thighs with salt and pepper, took a few springs of rosemary from the garden, and done with the prep.

調理はまず鶏肉に焼き色をつけるところから。そのままオーブンに入れることのできる鋳鉄のフライパン(無ければ深めの耐熱皿でも良いですが、見栄えはこちらが良い)にキャノーラ油を少量注いで良く熱し、鶏モモ肉をこんがりと焼きます。野菜と共にオーブンで仕上げるので中まで火を通す必要はなく、いい色になったら別皿に移しておきます。

Started the cooking by browning the chicken thighs in a well heated ovenproof cast iron skillet (a deep baking dish would do, but a cast iron skillet is more visually appealing) with a dash of canola oil. No need to cook through the chicken as it will be finished in the oven with the vegetables - remove from the skillet once you have a nice brown color and set aside on a platter.

鶏肉を取り出したままのフライパンに今度は野菜を投入し、さっとかき混ぜて焼き汁を絡めたら鶏肉をその上に載せ、さらにローズマリーも載せ、あらかじめ375F(190℃)に熱しておいたオーブンにフライパンごと入れます。そのまま野菜に火が通るまで(20〜30分)焼けば鶏肉も丁度仕上がり、あとは食べるだけ。上の写真では焼き上がり直前にレモンの輪切りを載せてさらに見栄え向上を図りましたが、これは別にしなくても良し。肉と野菜を一緒に食べる事のできる、ワインとも合う(ピノノワールかサンジョベーゼ等の軽めの赤が良い)一品です。

Add the vegetables to the same skillet (don't wash!), mix lightly to coat them with pan juices, place the browned chicken thighs on top with the rosemary, then place the skillet into an oven preheated to 375F and roast until the vegetables are cooked through (20-30 minutes) - the chicken should be also done at that point - and time to eat. The photo above shows lemon slices placed a few minutes before the roasting was done, but that's just an added step for aesthetic reasons. A one-dish solution for eating meat and vegetables. Also goes well with a light red wine such as Pinot Noir or Sangiovese.

Stewed Hamburger (Sailsbury) Steak 煮込みハンバーグ

以前取り上げたハンバーグを応用(使い回し)した煮込みハンバーグです。「煮込む」のは厚目のハンバーグを上手に焼くのが難しいことに対する「チート」かな、と思ってこれまで作ったことはありませんでしたが、先日大量に作って冷凍してあったハンバーグ種を使わなきゃ、と言う時にためしてみたら焼いたものとはまた違う味わいで美味。「食わず嫌い」ならぬ「作らず嫌い」でした(笑)。

  • 皮を剥いたニンジンを大きめに切り、塩を振って電子レンジで火を通したものと、ブロッコリーを軽く茹でた、あるいは蒸したものを用意する
  • 鋳鉄のフライパン(オーブンに入れるためこれを使用)でベーコンを数切れ炒め、油が出て香ばしく焼けたら取り出し、刻んでおく
  • 余分な油をペーパータオルで拭ってからハンバーグを入れ、両面にいい焼き色が付くまで焼いてから(火を完全に通さなくても良い)一旦取り出す
  • ハンバーグの焼き汁が残ったフライパンに薄切りのタマネギとマッシュルームを入れ(油が足りず焦げてしまいそうならバターやサラダ油を補う)て炒め、キツネ色になったら小麦粉を少量加え、粉っぽさが無くなるまでさらに炒める
  • お湯で溶いたチキンコンソメ、赤ワイン、ケチャップ、ウスターソースを好みの配分で加え(写真のものは4:2:1:1ぐらいの比率、量はフライパンの大きさに合わせて)、良く混ぜ合わせて沸騰寸前まで加熱する
  • ハンバーグを再投入し、ニンジンを加え、325℉(162℃)に熱しておいたオーブンにフライパンごと入れて10分ほど煮込む
  • ブロッコリーとベーコンを乗せ、さらに5分ほどオーブンで熱して完成
ドミグラスソースなどを使えば本格的なのでしょうが、これはこれでご飯に合う「家庭の味」でした。そしてワイン(カベルネソービニョン)にも。

Made this dish as a way of utilizing leftover (uncooked and frozen) hamburger patties. I've avoided stewed hamburgers (popular in Japan) thinking that stewing was a technique to avoid undercooking or overcooking thick hamburger patties, and therefore akin to cheating, but this turned out to be a pretty tasty dish in its own right. Never dismiss a dish without eating - or in this case, making it.
  • Prep the vegetables - peel and and cut carrots into fairly large pieces, then cook them in a microwave with a sprinkling of salt, and also lightly boil or steam some broccoli
  • Fry a few slices of bacon in a cast iron skillet until the fat is rendered, set aside the bacon and chop into small pieces
  • Wipe off excessive fat with a paper towel and cook the hamburgers until nicely browned on both sides - no need to cook through - then set aside
  • Add thinly sliced onions and mushrooms to the pan and sauté until slightly caramelized in the pan juices (add some butter/oil if necessary to avoid burning), add a small amount flour and stir well until the onion/mushroom mix is evenly coated
  • Add a mix of chicken bouillon (cubes dissolved in hot water is fine), red wine, ketchup, and Worcestershire sauce to taste (I used a 4:2:1:1 ratio and adjusted the amount to have enough cooking sauce in the skillet), bring to a simmer
  • Add the hamburgers and the carrots into the skillet, place in an oven heated to 325F, and cook for 10 minutes or so
  • Add the broccoli and the chopped bacon, cook for another 5 minutes, then serve in the skillet
If one could make some demi glace this would become a pretty elaborate dish, but the above broth/red wine/ketchup/WS combination makes this into a rice-friendly, homestyle dish. Went well with a Cabernet, too.

Guacamole ワカモレ

カリフォルニアで生活するようになってからメキシコ料理を食べる機会が多くなり、昼食においてはローテーション入りすらしています。家ではそれほど作りませんが、時々作り立てのワカモレ(アボカドのディップ)が食べたくなるので自製します。熟したワカモレを皮からくりぬき、刻んで潰したところに刻んだトマト、赤タマネギ、シラントロ(コリアンダー)、ハラペーニョ(青唐辛子)、ニンニクとライムの絞り汁を混ぜこみ、塩とクミンで味付けして完成。この時はポークのタコスも作って共に食しました。

I've eaten Mexican food a lot more frequently after moving to California, even to the point that it's entered my regular list of lunch options. Don't make it as much at home, but occasionally a craving for freshly made guacamole strikes and I end up making it myself. Scoop avocados from the skin, chop and lightly crush, then mix with chopped tomatoes, red onions, cilantro, jalapenos, garlic, and lime juice, then season with cumin powder and salt. Had this with also homemade pork tacos.

Chicken & Egg "Mother and Child" Domburi with Broccoli in Sesame Sauce 親子丼とブロッコリの胡麻和え

昆布と鰹節で取った出汁を醤油、みりん、酒、砂糖で少し甘めのそばつゆ風に味付けしたものを作るところから始めて、たっぷりの鶏もも肉、卵は半熟で親子丼を作りました。そんな手間かける料理か、という突っ込みはご無用に(笑)。グリーンピースを散らして、アタマとつゆを多めに盛りつけました。

Made Japanese seaweed and bonito flake broth ("dashi") and flavored it with soy sauce, mirin, sake, and sugar to make a slightly sweet sauce, similar to a soba dipping sauce. Stewed some thinly sliced onions and chicken thigh meat in the sauce, then mixed in some lightly beaten eggs, then poured the mixture over rice while the egg is slightly creamy and sprinkled some peas on top to make what's called a "Oyako (Mother and Child) Domburi (rice bowl)". Usually one does not make the sauce from scratch, but worth the extra trouble. Served a higher ratio of the chicken-egg-onion mix to rice than usual,


野菜も無いとね、ということで付け合わせはブロッコリーの胡麻和え。すり胡麻と醤油、砂糖、酒、みりん(親子丼とかぶりますが)を混ぜ、さっと茹でたブロッコリと和えました。定番胡麻和えのアメリカ風アレンジです(笑)。

Had some veggies in the form of broccoli in a sesame sauce. Mixed some ground white sesame with a bit of soy sauce, sugar, sake, and mirin, then tossed with blanched broccoli. An American variation of a traditional Japanese vegetable side dish.
