Striped Bass Roasted with Fennel, Side of Baby Potatoes ストライプドバスとフェンネルのロースト、ベビーポテト添え

Whole fresh fish roasted with some herbs and vegetables is a dish that is so simple, yet impressive to the eye and tasty - a great dish for parties. Not to say that it won't work for dinner at home for two - quite to the contrary, there's more to share and makes a very intimate dining experience.

Scaled, gutted, and cleaned a whole striped bass bought at the local farmer's market, seasoned the stomach cavity generously with salt and pepper, then stuffed it with fennel leaves (fronds), a few sprigs of rosemary, sliced lemon, and crushed garlic. Placed the fish on a bed of thinly sliced fennel bulbs in an ovenproof dish, seasoned again, then placed some more sliced lemon and fennel fronds and drizzled a good amount of olive oil and added a splash of dry white wine. Placed in an 375F oven and cooked until the flesh is flaky and the fennel is lightly caramelized. Garnished with some chopped parsley and basil, and served with baby potatoes tossed in canola oil with garlic cloves rosemary sprigs and baked in the same oven.

Wonderful aroma from the fennel and herbs permeates the fish - no "fishiness" here!

丸ごとの新鮮な魚をハーブと野菜と共にローストしただけ、という料理はシンプルでありながら見た目も味も良く、パーティ料理にうってつけなのですが、家で普通に作って二人占めするのもこれまた良し、です(笑)。

ファーマーズマーケットで買ったストライプドバス(スズキの仲間)のウロコと内蔵、エラを取り、良く水洗いしてから腹腔中にたっぷりと塩コショウし、フェンネルの葉とスライスしたレモン、ローズマリーの枝数本、そして潰したニンニクを詰め、耐熱皿に敷き詰めたフェンネルの根の薄切りの上にのせます。さらに全体に塩コショウをし、フェンネルの葉とスライスレモンを魚に載せ、オリーブ油と少量の白ワインをかけまわしてオーブンに入れ、375℉(190℃)で魚に火が通り、フェンネルが茶褐色になるまで焼きます。仕上げに刻んだパセリとバジルの葉を散らし、同じオーブンでキャノーラ油とローズマリー、ニンニクと共にローストしたベビーポテトを添えて頂きました。

お魚にフェンネルやハーブの香りが移り、魚臭さのみじんもない一皿です。

Chilled Capellini with Heirloom Cherry Tomatoes and Prawns 冷たいトマトとエビのカペリーニ

これまた冷たいパスタ。茹でた小エビと様々な色のエアルームプチトマトを二つ割りにしたものををエキストラバージンオリーブオイルで和え、塩コショウしてしばらく冷やしておきます。これを冷たいカペリーニ(前のエントリ参照)に載せ、刻んだチャイブを振って出来上がり。これはさっさと食べる一品。

Another chilled pasta dish (great on those warm spring/summer days). Tossed some cooked shrimp with a variety of halved heirloom cherry tomatoes in extra virgin olive oil and seasoned with salt and pepper. Throw the mix over chilled capellini (see previous post), sprinkle some chopped chives, then eat quickly.

Chilled Capellini with Market Squid and Tomatoes 冷たい小イカ、トマトのカペリーニ

暖かくなってくると冷たいパスタが食べたくなるものです。ソースは新鮮なモントレー湾産の小イカ(Monterey SquidまたはMarket Squidという名前で売っています)をニンニク共にオリーブ油で軽く火を通す程度に炒め、刻んだトマトと和え、塩コショウして冷ましたもの。これをアルデンテ手前までほんの数分茹でたカペリーニを氷水にさらして冷やしたもの(水は良く切る)と極上のエキストラバージンオリーブオイルと共に混ぜ合わせ、刻んだパセリを振って出来上がり。

Warm weather calls for chilled pasta. Briefly sautéd fresh market squid from Monterey Bay with garlic in olive oil, mixed with chopped tomatoes, and seasoned with salt and pepper, then set aside until cool. Cooked capellini for just a few minutes, a bit short of al dente, then chilled in ice water and drained well. Toss the pasta and the squid sauce with some good (really good) extra virgin oilve oil, then garnish with chopped parsley.

Mahi Mahi with Bok Choy and Shiitake Mushrooms in Red Curry Sauce マヒマヒと青梗菜、シイタケのレッドカレーソース

青梗菜と薄切りにしたシイタケを炒め、タイ風のレッドカレーソース(市販品)を混ぜて人煮立ちさせたものを塩コショウしたマヒマヒ(シイラ、身のしっかりした他の白身魚でも代替可能)をフライパンで軽く火が通るまでさっと焼いたものにかけたものです。簡単でも美味。

Sautéd some bok choy and sliced shiitake mushrooms in vegetable oil, added some Thai red curry sauce (used a bottled one from Trader Joe's), simmer a bit, then poured over seasoned mahi mahi filets quickly panfried in a skillet. Quick, simple, yet delicious.

Spaghetti Al Tonno E Pomodoro ツナ入りトマトソースのスパゲッティ

以前作って冷凍しておいたトマトソース(この作り方はいずれ)があったのでたまには目先を変えて、と思い作ってみました。解凍したソースを鍋で温め、缶入りのツナを漬け水ごと(油漬の缶の場合は身だけの方が良いと思います)ほぐしながら入れ、ケッパーを加えて軽く沸騰させたソースを茹でたてのスパゲッティにかけ、パセリを散らして完成。至ってシンプルですが満足度は高い一皿です。これにロメインレタス(球状ではな長細く育つ種類)のサラダを添えて頂きました。

Made this simple pasta using some frozen homemade tomato sauce (will write about this at some point) as a departure from the meat-based tomato sauces that I often fall back on. Very simple to make - heated the defrosted sauce in a pan, then added a whole can of tuna with the water (if using oil packed tuna, better to drain), broke up the tuna, added some capers, and brought to a simmer. Poured the sauce over freshly cooked spaghetti and sprinkled some chopped parsley to finish. Enjoyed with a simple salad of romaine lettuce.

Ishikari Nabe (Ishikari Style Hotpot) with Salmon 石狩鍋

石狩川の鮭ならぬカリフォルニアのキングサーモンで作った石狩鍋です。味噌仕立ての昆布出汁で骨付きサーモンのぶつ切り、豆腐、シメジ(味の強くないキノコなら大概良し、シイタケは合わないと思います)、野菜(長ネギ、春菊、大根、ニンジン)を煮込み、食べる直前に生イクラを載せて出来上がり。イクラが固くなってしまう前に取り分けて食べるのが肝心。残った汁に茹でた生ラーメンを入れて頂くのがまた美味。

付記:Wikipediaの「石狩鍋」の記事にも私の写真(上のとは違います)が使われておりました。

Would've loved to make this nabemono (shared hotpot) using sake (Chum salmon) caught in the Ishikari River of Hokkaido, Japan, after which this nabe is named - but wild King salmon from California is a fine, if not better, substitute. Cooked cut up bone-in salmon, tofu, shimeji mushrooms (other mild-flavored mushrooms like enoki would also work - I'd avoid using shiitake), and cut vegetables (Japanese negi onions, shungiku chrysanthemum, daikon radish, and carrots) in a miso-flavored dashi broth made with dried kombu kelp, then added fresh ikura (salmon roe) right before serving. Important to serve this and ask people to dig in before the ikura hardens. Bonus - adding some cooked ramen noodles into the leftover soup to conclude the communal eating experience.

Aqua Pazza of Red Pacific Snapper and Manila Clams フエフキダイとアサリのアクアパッツア

中国系スーパーで買った日本の真鯛みたいな丸ごとのRed Snapper(フエフキダイ科の魚)とアサリで作ったアクアパッツアです。オリーブオイルとイタリア産の白ワイン(ソアーベ等の辛口が良い)、水を耐熱皿に注ぎ、刻んだニンニクと黒オリーブ、サンドライトマト、赤唐辛子そして塩コショウを入れてオーブンで加熱し、良いスープ様になったところで内蔵、エラ、ウロコを取り除いた丸ごとの魚とアサリを入れ、再びオーブンで加熱。アサリが開き、魚がさっと蒸されたところで取り出し、塩コショウを軽く振ってから刻んだイタリアンパセリをばさっとふりかけて耐熱皿ごと食卓に出しました。さっぱりと味のついた魚と貝を食べ尽くしたあとの、魚介の旨味が出た残り汁に茹でたてのスパゲッティを入れて食べるのがまた美味。

Made this aqua pazza (Italian for "crazy water") with a whole red snapper and Manila clams purchased  at a local Chinese supermarket. Heated a mix of olive oil, dry white wine (an Italian Soave would be nice), and water seasoned with salt and pepper in an ovenproof dish with chopped garlic, sun dried tomatos, and red pepper flakes until it reaches a nice broth-like state, then added the whole fish (cleaned and gutted, but on the bone) and clams, heated some more until the clams open and the fish is cooked through. Seasoned to taste with salt and pepper, then sprinkles a handful of chopped Italian parsley before serving. After enjoying the mildly flavored fish and clams, throw some freshly cooked spaghetti into the broth and toss lightly for a delicious pasta dish infused with the umami from the fish and clams.

"Chanko" Style Hotpot with Chicken Meatballs and Vegetables 鶏つみれ入り「ちゃんこ」鍋

これは数年前の年越しパーティで作ったものですが、鶏もも肉のミンチ(自分で叩いて作りました)にネギ、生姜、日本酒、醤油そして塩コショウで味付けした肉団子と、水菜、白菜、大根、シメジ、豆腐、そしてシラタキといった具材を塩味の鶏ガラスープで煮て作った「ちゃんこ鍋」です。

Made this chanko nabe (sumo stable style hotpot) for a New Year's Eve party several years ago. Cooked chicken meatballs made from minced (by yours truly) thigh meat mixed with chopped scallions, grated ginger, sake, salt and pepper in a broth drawn from a whole chicken carcass, together with mizuna greens, hakusai (Napa Cabbage), shimeji mushrooms, tofu, and shirataki noodles (interestingly, the photo used in the Wikipedia article for shirataki is mine).

Shimeji mushrooms and komatsuna greens cooked in a konnyku-bonito dashibroth シメジと小松菜の出汁煮

ハマチの塩焼きに小松菜の煮物、という組み合わせは以前も作りましたが、今回は小松菜とシメジを(コクを出すべく)軽くキャノーラ油で炒め、醤油そして(みりんを切らしていたので代わりに)酒と砂糖で薄く味付けした鰹と昆布の出汁を注いでさっと煮付けたものです。

This is a slight variation from a side dish that I previously made with greens as a side dish to go with salted and grilled hamachi (yellowtail). Stir fried washed and chopped komatsuna leaves and shimeji mushrooms briefly with canola oil, then added a bonito-and-kombu dashi flavored with a bit of soy soy sauce, sake, and sugar (the sake and sugar mix was a substitute for mirin, which I've run out of) and stewed for a few minutes. The intent for stir-frying was to enhance the flavors of the komatsuna and shimeji, which could be a bit bland if merely cooked in dashi.

完成した食事はこちら。前回取り上げた時はワカメとタマネギの味噌汁でしたが、今回は青ネギとお豆腐。

The complete meal - the difference from the previously featured one being the miso soup, this time made with tofu and sliced scallions (instead of seaweed and onions).

Stewed Hamburger (Sailsbury) Steak 煮込みハンバーグ

以前取り上げたハンバーグを応用(使い回し)した煮込みハンバーグです。「煮込む」のは厚目のハンバーグを上手に焼くのが難しいことに対する「チート」かな、と思ってこれまで作ったことはありませんでしたが、先日大量に作って冷凍してあったハンバーグ種を使わなきゃ、と言う時にためしてみたら焼いたものとはまた違う味わいで美味。「食わず嫌い」ならぬ「作らず嫌い」でした(笑)。

  • 皮を剥いたニンジンを大きめに切り、塩を振って電子レンジで火を通したものと、ブロッコリーを軽く茹でた、あるいは蒸したものを用意する
  • 鋳鉄のフライパン(オーブンに入れるためこれを使用)でベーコンを数切れ炒め、油が出て香ばしく焼けたら取り出し、刻んでおく
  • 余分な油をペーパータオルで拭ってからハンバーグを入れ、両面にいい焼き色が付くまで焼いてから(火を完全に通さなくても良い)一旦取り出す
  • ハンバーグの焼き汁が残ったフライパンに薄切りのタマネギとマッシュルームを入れ(油が足りず焦げてしまいそうならバターやサラダ油を補う)て炒め、キツネ色になったら小麦粉を少量加え、粉っぽさが無くなるまでさらに炒める
  • お湯で溶いたチキンコンソメ、赤ワイン、ケチャップ、ウスターソースを好みの配分で加え(写真のものは4:2:1:1ぐらいの比率、量はフライパンの大きさに合わせて)、良く混ぜ合わせて沸騰寸前まで加熱する
  • ハンバーグを再投入し、ニンジンを加え、325℉(162℃)に熱しておいたオーブンにフライパンごと入れて10分ほど煮込む
  • ブロッコリーとベーコンを乗せ、さらに5分ほどオーブンで熱して完成
ドミグラスソースなどを使えば本格的なのでしょうが、これはこれでご飯に合う「家庭の味」でした。そしてワイン(カベルネソービニョン)にも。

Made this dish as a way of utilizing leftover (uncooked and frozen) hamburger patties. I've avoided stewed hamburgers (popular in Japan) thinking that stewing was a technique to avoid undercooking or overcooking thick hamburger patties, and therefore akin to cheating, but this turned out to be a pretty tasty dish in its own right. Never dismiss a dish without eating - or in this case, making it.
  • Prep the vegetables - peel and and cut carrots into fairly large pieces, then cook them in a microwave with a sprinkling of salt, and also lightly boil or steam some broccoli
  • Fry a few slices of bacon in a cast iron skillet until the fat is rendered, set aside the bacon and chop into small pieces
  • Wipe off excessive fat with a paper towel and cook the hamburgers until nicely browned on both sides - no need to cook through - then set aside
  • Add thinly sliced onions and mushrooms to the pan and sauté until slightly caramelized in the pan juices (add some butter/oil if necessary to avoid burning), add a small amount flour and stir well until the onion/mushroom mix is evenly coated
  • Add a mix of chicken bouillon (cubes dissolved in hot water is fine), red wine, ketchup, and Worcestershire sauce to taste (I used a 4:2:1:1 ratio and adjusted the amount to have enough cooking sauce in the skillet), bring to a simmer
  • Add the hamburgers and the carrots into the skillet, place in an oven heated to 325F, and cook for 10 minutes or so
  • Add the broccoli and the chopped bacon, cook for another 5 minutes, then serve in the skillet
If one could make some demi glace this would become a pretty elaborate dish, but the above broth/red wine/ketchup/WS combination makes this into a rice-friendly, homestyle dish. Went well with a Cabernet, too.

Salad of Mixed Greens and Cara Cara Oranges with Basic Vinaigrette Dressing 季節の葉野菜とカラカラオレンジのサラダ、基本のヴィネグレット・ドレッシング

正直に言えば野菜の旨さに目覚めたのは米国移住以後、しかもこの5〜6年なのですが、最近は近所(サンフランシスコ市内)のファーマーズマーケットに行っては季節の旨そうな野菜を物色するようになっています。

そんな野菜をサラダ、というと芸が無いようですが(無論、他の調理方法でも食べています)、野菜の下ごしらえや油と塩の使い方をナパのとある有名レストランのレシピを通じって教わってからはかつて「野菜食べなきゃと」義務的に食べていたものを、作る所まで含めて楽しめるようになりました。

これもそんな一品。穫れたての葉野菜を氷水で洗ってしゃっきりさせてからサラダスピナーで水をしっかり切り(これ重要)、シンプルなヴィネグレットドレッシング(以下参照)で優しく和えてから、食べる直前に塩コショウを振ったものです(食べる直前の塩、というのが葉野菜のしゃっきり感を保つ上でこれまた重要)。そこに甘みを足すべくこれまたファーマーズマーケットで買ったカラカラオレンジを載せて完成。

ヴィネグレットドレッシングの作り方:

  • 非金属(お酢の酸対策)の容器に注いだ赤ワインヴィネガーに細かく刻んだ少量のニンニク(大きさにもよるけど1~2カケ)を漬け、30分ほど置く
  • ニンニクの風味がお酢に移ったかな、というところでオリーブ油を加える
  • ワインヴィネガーとオリーブ油の比率は1:4~1:5といったところ
  • お酢と油が分離しないよう、ほんの少量(入れすぎるとマスタード臭くなるので)のディジョンマスタードを加え、泡立て器などで良く撹拌する
  • 和える際には野菜の歯ごたえと形状に気をつけながら全ての材料がうっすらとコートされるように良く混ぜ合わせる
To be totally honest, I've learned to appreciate how good vegetables can taste fairly recently (the last 5~6 years, perhaps), but these days I find myself making regular trips to the local farmer's markets (in San Francisco) to seek tasty vegetables of the season. 

It may seem awfully simplistic to make salads out of such fine vegetables, but after learning some techniques on making good salad (such as how to use oil and salt, and how to prep the vegetables) from the recipes of a famous Napa restaurant, I find myself enjoying making and eating salads - what I previously ate out of a sense of obligation to have a "balanced" meal.

The pictured is one of such salads that I made. Washed a spring mix of leafy vegetables in ice water, then removed the excess water (critical step to have a crispy texture) with a salad spinner before gently tossing with a simple vinaigrette (see below) so that the vegetables are evenly and thinly coated - and only seasoning with salt and pepper immediately before serving (also critical: salt added too early will rob the vegetables of its crispiness). Finished with some Cara Cara oranges to add some sweetness.

How to make a simple vinaigrette:
  • Pour a bit of red wine vinegar into a non-metallic bowl, then add a small amount (1~2 cloves, perhaps) of finely chopped garlic, let stand for 30 minutes or so
  • When you feel that the vinegar is infused with garlic flavor, add olive oil
  • Ratio of vinegar to oil: 1:4 to 1:5 depending on your taste
  • Add a dash of Dijon mustard to emulsify the oil - unless you want a strong mustard flavor, keep the amount very small, mix well
  • When tossing the salad, toss well so all the vegetables are thinly coated, but be gentle so the vegetables maintain their original shape and texture

Ossobuco alla Milanese with Saffron Risotto ミラノ風オッソブッコとサフラン風味のリゾット

以前骨付きの子牛のすね肉、しかも骨髄付きのものをスーパーで見つけてつい作ってしまったオッソブーコ。肉をオリーブ油で全面こんがり焼いてから細かく刻んで炒めたタマネギ、セロリ、ニンジン、ニンニクの香味野菜と白ワイン、トマトで煮込むという技よりは時間を要する料理です。この時は煮込み時間を利用して薬味のグレモラータ(パセリのみじん切りにレモンの皮を摺り下ろしたものとニンニクのみじん切りを混ぜたもの)を作り、サフラン入りのリゾットまで作ってしまいました。バローロと合わせて大満足。

Made this Ossobuco when I found some bone-in veal shanks with bone marrow at the local Whole Foods Market. Browned the shanks an all sides, then stewed in a mixture of chopped and sautéd aromatics (onions, celery, carrots, and garlic), white wine, and tomatos. More time than skill required to make this - used the stewing time to make gremolata (mix of chopped parsley, lemon zest, and garlic) as a garnish and a saffron risotto milanese on the side. Enjoyed with a Barolo - very satisfying.
